Chara and Frisk both canonically have they/them pronouns throughout the game. I don't know what kind of wank you're trying to stir up here, but calling Chara and Frisk she/her in a fic is as jarring to me as when authors decide to call all the Steven Universe gems they/them in fic. Yes, they're ambigiously-gendered, yes, the game plays a lot with inviting player projection. You still get through the whole game and they're always they/them. In addition to that, the game has other they/them characters, like Napstablook, which makes it clearer that Undertale uses it as a gendered pronoun instead of only for ambiguity. It doesn't talk a lot about gender. You could imagine Chara and Frisk as girls, agender, demigirls, bigender, genderfluid, whatever. But they're still canonically both they/them, make what you will of that.

Femslashex has always included nonbinary characters. It also, if memory serves, requires you to offer like three different fandoms to improve matching? So Chara/Frisk can't be the only thing this person is offering.

I don't know what this person's deal is. I don't demand people disclose or claim genders in order to have shipping preferences, for the same reason I don't demand receipts of histories of trauma in order to like darkfic. I don't have a problem with a person following the rules on character offers/requests not wanting to use non-canonical pronouns for their characters. If getting Chara or Frisk with their canonical pronouns would offend you, maybe request canonically female characters instead.
